SBE Jerked Chicken Recipe

Step 1

In a large bowl, mix 1Tbsp "The Jamaican Jerk", 6oz (1/2) dark beer, 1 thumb sliced ginger, 2 cloves sliced garlic, 1 sliced green onion and 1 cup buttermilk.
Step 2
- In a ziplock bag mix the chicken marinade and chicken. Give it a Good Shake and place in the fridge for 4-8 hours.
Step 3

For Cooking in the oven:
Preheat oven to 425°F (218°C). Once oven is to temp:
Pat the drumsticks dry, place on baking sheet and baste with Jerk Sauce. Place in oven and cook for 40-45 minutes. Flip the drumsticks after 20 minutes and re-baste with more jerk sauce.

For Grill:
Preheat Grill. Once Grill is to temp:
Pat the drumsticks dry, place on baking sheet and baste with Jerk Sauce. Place on Grill and cook for 7 minutes. Flip the drumsticks and re-baste with more jerk sauce. After 7 minutes flip and re-baste again. Repeat until internal temperature is 165 degrees F.
Step 4-A

For Air Fryer:
Preheat Air Dryer to 375° F (190° C).
Pat the drumsticks dry, place on baking sheet and baste with Jerk Sauce. Place in air fryer l and cook for 10 minutes. Flip the drumsticks and re-baste with more jerk sauce. Repeat until internal temperature is 165° F (74° C).
Step 4-B

For Oil Frying:
Add about 2 cups of neutral oil to a sauce pan and heat the oil to 375° F (190° C).
Pat the chicken dry and carefully place in oil. Do not overcrowd the sauce pan. Fry each piece of chicken for 10-12 minutes (until internal temperature is 165° F (74° C) ). Place chicken on wire rack and let cool. Then baste with Jerk Sauce.
- My favorite bar double cooks wings. They fry them, baste them then put them in the oven at 375° F (190° C) for about 5 minutes then baste them again.
