SBE Jerked Chicken

 Ingredients Chicken Marinade
1 Tbsp the Jamaican Jerk Seasoning
6 oz Dark Beer
1 Thumb Ginger - Sliced
2 Cloves Garlic - Sliced
1 Green Onion - Sliced
1 Cup Buttermilk
3 lbs Chicken Thighs and Legs (Skin On)

 

 Ingredients Sauce
2 Tbsp the Jamaican Jerk Seasoning
6 oz Dark Beer
1/2 Cup Molasses
1/4 cup Soy Sauce

Step 1

  • In a large bowl, mix 1Tbsp "The Jamaican Jerk", 6oz (1/2) dark beer, 1 thumb sliced ginger, 2 cloves sliced garlic, 1 thumb sliced green onion and 1 cup buttermilk.   

Step 2

  • In a ziplock bag mix the chicken marinade and chicken.  Give it a Good Shake and place in the fridge for 4-8 hours.

Step 3

  • In a sauce pan over medium high heat mix 6oz dark beer, 2 Tbsp "The Jamaican Jerk", 1/2 cup Molasses and 1/4 cup Soy Sauce. Stir and bring to a boil.  Once boiling reduce to a simmer and simmer for 15 minutes.

Step 4

  • Allow sauce to cool and then put in the refrigerator.

Step 5

  • For Cooking in the oven:

    Preheat oven to 425°F (218°C). Once oven is to temp:

    Pat the drumsticks dry, place on baking sheet and baste with Jerk Sauce. Place in oven and cook for 40-45 minutes. Flip the drumsticks after 20 minutes and re-baste with more jerk sauce.

Step 6

  • For Grill:

    Preheat Grill. Once Grill is to temp:

    Pat the drumsticks dry, place on baking sheet and baste with Jerk Sauce. Place on Grill and cook for 7 minutes. Flip the drumsticks and re-baste with more jerk sauce. After 7 minutes flip and re-baste again. Repeat until internal temperature is 165 degrees F.

Step 7

  • For Air Fryer:

    Preheat Air Dryer to 375° F (190° C).

    Pat the drumsticks dry, place on baking sheet and baste with Jerk Sauce. Place in air fryer l and cook for 10 minutes. Flip the drumsticks and re-baste with more jerk sauce. Repeat until internal temperature is 165° F (74° C).

Step 8

  • For Oil Frying:

    Add about 2 cups of neutral oil to a sauce pan and heat the oil to 375° F (190° C).

    Pat the chicken  dry and carefully place in oil.  Do not overcrowd the sauce pan. Fry each piece of chicken for 10-12 minutes (until internal temperature is 165° F (74° C) ).  Place chicken on wire rack and let cool. Then baste with Jerk Sauce.

  • My favorite bar double cooks wings.  They fry them, baste them then put them in the oven at 375° F (190° C) for about 5 minutes then baste them again.
