 Ingredients
1 Pack Chili and Chill
12 oz Beer (I used Shiner Bock)
1 Shallot - Diced
1 White Onion - Diced
1 Poblano - Diced
1 lbs Ground Bison
6 Pieces of Bacon - Chopped
3 Cloves of Garlic
28 oz Can Crushed Tomatoes
8oz can Tomato Sauce
2 tsp Worcestershire Sauce
1 Can of Chili Beans (Optional)
Salt (To Taste)
 Cheddar Cheese (For Garnish)
Green Onion (For Garnish)

 

Recipe

Step 1

  • Preheat oven to 400°F ( 204°C)

Step 2

  • Coat Poblano with oil and roast in the oven for 30 minutes, rotating once.

Step 3

  • Take Poblano out of the oven and put in a covered ice bath for 10 minutes.

Step 4

  • On stove top, in large pot, cook bacon over medium heat for 5 minutes

Step 5

  • Once bacon has cooked add ground bison, garlic, onion and shallot. Cook until bison is almost browned.

Step 6

  • Add Chili and Chill spice and cook for 3 minutes.

Step 7

  • Add: 12oz Beer, 28oz Crushed Tomato, 8oz Tomato Sauce, 2 tsp Worcestershire Sauce and Diced Poblano. Retain heat at medium until boiling.

Step 8

  • Once chili is boiling reduce heat to simmer and cook for 45 minutes.

Step 9

  • Add Beans, if you’re one of those, and simmer for another 15 minutes. Add salt to taste

Step 10

  • Remove from heat. Garnish with Cheese and Green Onion and then Enjoy!
